I stood in the baking section of my local grocery store. I pulled my tan sunglasses over my eyes as the tears started to stream down my cheeks. Heaviness was felt in my chest and I put the box of Gluten free cake mix down and ran to the bathroom a few isles down. I locked myself into the stall and hid my face into the door. I cried until I felt I had nothing left.
It had been one month since my son's diagnosis of Eosinophilic Esophagitis. Slips right off your tongue doesn't it? And in a few days my baby boy was going to be turning five years old. Before his diagnosis we had agreed on his "It's a Small World" themed birthday. And he had specifically asked for a Tower of Terror cake. I would agree that this was an Interesting cake request; however just recently my son had conquered this "Big Boy"ride and was quite proud of himself! As he should be! Normally I would send such a request to my local bakery; but since he is now so limited I was left to create my own. That night I joined every mommy support group for "eoe"(Eosinophilic esophagitis for short) and asked for a cake recipe. The response was overwhelming. I stayed up all night creating his perfect cake!
