My joy for cooking and serving others continued through adulthood and ultimately led me to the Peppercorn Pantry where I discovered my dream. Providing a place for people to gather for fellowship and comforting food has been a delight over the past 11 years. I hope these recipes allow a glimpse into my world of bringing others joy through the art of cooking.
Raspberry Parfait Pie

4 oz cream cheese
1/3 cup powdered sugar
1 tsp vanilla
1 cup heavy whipping cream
9 ½ “ baked pie shell
1 ¼ cups water
¼ cup sugar
3 oz raspberry Jell-O
12 oz frozen raspberries
Using an electric mixer with a whisk attachment, whip cream cheese until smooth. Add powdered sugar and mix well. Add vanilla and slowly add the heavy cream, scraping the bowl every few minutes. Beat until stiff. Pour into pie shell and spread smoothly. In a small saucepan, bring water to a boil. Take the pan off the burner and add sugar and Jell-O. Whisk until all is dissolved. Place frozen raspberries in a medium bowl and pour hot sugar/Jell-O mixture over the raspberries. Gently stir together. When the Jell-O mixture is slightly set pour over top of the cream cheese layer. Chill for at least 1 hour before serving
